Wakatsuki Saryō
Located in the shared spaces of the main building, Wakatsuki Saryō is a fully reservation-based restaurant. A Franco-Japanese tasting menu prepared by our chef and general manager, Mr. Ikenoya.
Ingredients personally selected by the chef are framed within French cuisine. Pairings centre on Shimane local sake. Please take your time to enjoy the dialogue with each plate.

A Franco-Japanese tasting menu by Mr. Ikenoya, our chef and general manager. Ingredients sourced by the chef himself — vegetables and game from Unnan's mountain villages, seasonal fish from the Sea of Japan, and aged Shimane beef — are framed within French cuisine. The seasons of this land are woven into each plate.

External visitors are also welcome to enjoy the Franco-Japanese tasting menu at Wakatsuki Saryō. Chef Ikenoya carefully selects local ingredients and shapes them into a full tasting menu for external guests.

Pairing
Pairings are centred on Shimane local sake. Non-alcoholic pairings are also available on request.
Breakfast (for inhouse guests)
For breakfast, you may choose between Japanese and Western. Built around Shimane eggs, local fish and Okuizumo vegetables, we prepare one tray, one plate at a time, attuned to the rhythm of the morning.

At present, only the Japanese breakfast is available. The launch date of the Western breakfast will be announced on the official website.

On the ceiling of the shared main-building entrance is an installation evoking an "inverted water surface", a motif drawn from tatara ironmaking. Beside it lies Wakatsuki Saryō: take your time, in this calm light and atmosphere, with the dialogue of each plate.
